Thai Baked Coconut Salmon

Serves 4

Pureblends 1,2,3 Marinade
2 tspns Olive Oil
4 heaped tspns Pureblends Thai Spice*
6 tspns water

4 salmon steaks
1 tin coconut milk
1 tblspn white wine vinegar
Handful of finely chopped coriander
1 spring onion, finely chopped
2 tblspns desiccated coconut                                         
1 tspn cumin seeds*
4 kaffir lime leaves
1 tblspn fish sauce
Juice of 1 lime
